I Pity the Blueberry Fool
recipe adapted from fashionablybombed.com
Makes 2
Part 1: Blueberry Compote:
- 1 cup Blueberries
- 1 tablespoon lemon juice
- 1/8 teaspoon lemon zest
- 2 tablespoons sugar
- 2 oz. blackcurrant liquor
- A few fresh blueberries for garnish
In a small pan add blueberries, lemon juice, lemon zest and sugar. Cook over medium heat, stirring frequently, until blueberries have broken down and compote becomes a thick liquid (about 5 minutes). Let the liquid cool down by putting the bottom of the pan in a bowl of ice. When the blueberry compote has has cooled completely, add blackcurrant liqueur.
Part 2: Whipped Cream:
- 1 cup whipping cream
- 1/2 teaspoon vanilla extract
- 2-3 tablespoons of sugar (or to taste)
- 1 oz. vanilla vodka
To a mixing bowl add whipping cream, vanilla extract and sugar. Whip the cream until it forms stiff peaks (but not too much, you don’t want to make butter!) Once it’s ready, gently fold in the vanilla vodka.
Finally, fold the majority of the blueberry compote into the whipping cream mixture, reserving a couple of tablespoons. Spoon into two cocktail glasses and garnish with the remaining blueberry compote and a few fresh blueberries.
